Ranch Wrap with Three-Pepper Salsa Recipe
Ingredients
* 2 1/2 cups (625 ml) fully-cooked shredded Certified Angus Beef ® beef
* 12 each (6-inch or 15 cm) corn tortillas
* 3/4 cup (175 ml) diced red pepper
* 1/2 cup (125 ml) diced poblano pepper
* 1/2 cup (125 ml) diced Anaheim pepper
* 1/2 cup (125 ml) canned corn, drained
* 1/2 cup (125 ml) diced sweet onion
* 2 tablespoons (30 ml) chopped fresh cilantro
* 1 cup (250 ml) diced tomatoes
* 1/2 tablespoon (7.5 ml) sugar
* 1 teaspoon (5 ml) kosher salt
* 1 teaspoon (5 ml) ground pepper
* 6 ounces (180 g) Queso Fresco or Feta cheese
Instructions
1. Heat shredded beef.
2. Wrap tortillas heavy-duty foil and heat.
3. For three pepper salsa, combine peppers, corn, onion, cilantro, tomatoes,
sugar, salt and pepper.
4. Assemble by placing 3 tablespoons (45 ml) shredded beef on each tortilla
with 2 tablespoons (30 ml) salsa and 1/2-ounce (15g) cheese. Wrap and serve.
