Basic Pizza Dough
Ingredients
* 2 envelopes active dry yeast
* 2 2/3 cups (650 ml) warm water (105-115° F or 46° C)
* 3 1/2 to 4 cups (1 L) unbleached all-purpose flour
* 2 teaspoons (10 ml) kosher salt
* Olive oil for the bowl
Instructions
* Sprinkle yeast over water. Let stand 1 minute, or until yeast is creamy.
Stir until yeast dissolves.
* In a large bowl, combine flour and salt. Add yeast mixture and stir until
soft dough forms. Turn dough onto a lightly floured surface and knead, adding
more flour if necessary, until smooth and elastic, about 10 minutes.
* Lightly coat a large bowl with oil. Place dough in the bowl, turning it to
oil top. Cover with plastic wrap and place in a warm, draft-free place until
dough doubles in size, about 1 1/2 hours.
* Flatten dough with your fist. Cut the dough into 8 equal pieces and shape
into balls. Flatten dough slightly and dust tops with flour. Place dough balls
on floured surface and cover each with plastic wrap, allowing room for dough
to expand. Let rise 60 minutes, or until doubled.
