Grilled Beef Pizza with Caramelized Onions and Blue Cheese Recipe

Ingredients

* 1 recipe basic pizza dough (recipe below) or 8 prepared dough balls for 6-inch (15 cm) pizzas
* Olive oil as needed
* 1 recipe Tomato Basil Sauce (recipe below)
* 2 pounds (900 g) fully-cookedCertified Angus Beef ® shredded beef
* 16 ounces (450 g) crumbled blue cheese
* 6 large sweet onions, sliced and caramelized
* 16 ounces (450 g) mozzarella cheese, shredded

Instructions

* Shape dough into 6-inch rounds, brush with olive oil and grill 3-4 minutes each side. Top with 1 ounce (30 g) sauce, 4 ounces (115 g) beef, 2 ounces (60 g) blue cheese, 2 tablespoons (30 ml) onions and 2 ounces (60 g) mozzarella cheese. Cover with domed lid until cheese is melted.
* Cut each pizza into fourths and serve.

Basic Pizza Dough

Ingredients

* 2 envelopes active dry yeast
* 2 2/3 cups (650 ml) warm water (105-115° F or 46° C)
* 3 1/2 to 4 cups (1 L) unbleached all-purpose flour
* 2 teaspoons (10 ml) kosher salt
* Olive oil for the bowl

Instructions

* Sprinkle yeast over water. Let stand 1 minute, or until yeast is creamy. Stir until yeast dissolves.
* In a large bowl, combine flour and salt. Add yeast mixture and stir until soft dough forms. Turn dough onto a lightly floured surface and knead, adding more flour if necessary, until smooth and elastic, about 10 minutes.
* Lightly coat a large bowl with oil. Place dough in the bowl, turning it to oil top. Cover with plastic wrap and place in a warm, draft-free place until dough doubles in size, about 1 1/2 hours.
* Flatten dough with your fist. Cut the dough into 8 equal pieces and shape into balls. Flatten dough slightly and dust tops with flour. Place dough balls on floured surface and cover each with plastic wrap, allowing room for dough to expand. Let rise 60 minutes, or until doubled.

Tomato Basil Sauce

Ingredients

* 1/2 cup (125 ml) olive oil
* 4 each garlic cloves minced
* 1/2 cup (125 ml) chopped sweet onion
* 1/4 cup (60 ml) finely chopped carrots
* 15 each ripe plum tomatoes; peeled, seeded and chopped
* 1 tablespoon (15 ml) sugar
* Kosher salt and freshly ground pepper to taste
* 1/2 cup (125 ml) coarsely chopped fresh basil

Instructions:

Sweat garlic, onion and carrots in olive oil in medium-size, stainless steel saucepan. Add tomatoes and sugar. Cook on low heat for 45 minutes, adjust seasoning and add basil. Keep warm for service.

Makes 8 pizzas or 32 appetizers
