Campfire Cookout Recipe
If you have a dutch oven, you already know how to prepare a deluxe feast outdoors.
But all you really need for an outstanding meal is a roll of tinfoil, and a
small grill to lay over your cooking fire. Any camping store carries different
models of these grills; we usually just hang on to one from a backyard grill
when it's time for a replacement.
- Bring one ear of corn in the husk, one good sized potato and a big steak from RMGS for everybody in your group.
- Get a bed of coals going and spread a thin layer to the back of the fire next to the inside of your rock ring to provide even heat, wrap your potato in foil and place on coals.
- Wrap corn, in husks, in foil and place on top of first layer. Add another layer of coals and add wood as needed to keep a good source of constant heat for the corn and 'taters.
- Lightly oil your clean grill, salt and pepper your steaks and place the grill over the coals after the first ingredients have been cooking about 30 minutes, a 1 ½
- inch thick steak will take about 6 minutes a side for a nice medium rare, do not allow the steaks to be in direct flame, adjust coals as needed to regulate heat..(Leave room to dig out a potato to test for doneness.)
If you fall a little behind, just remove the corn and potatoes from direct heat.
A pair of rubber kitchen gloves is mighty handy to husk the corn, and handle
the potatoes.
