Certified Angus Beef ® Breakaway Corned Beef in a Flour Tortilla with
Sweet Onion Relish, Gouda Cheese and Capers Recipe
Ingredients:
3 pounds (1.3 kg) Certified Angus Beef ® breakaway corned beef
Salt and pepper to taste
12, 6 inch flour tortillas
2 pounds (900 g) Gouda Cheese, grated
2 recipes of sweet onion relish
1 large jar capers, drained
Preparation:
Cook corned beef and season with salt and pepper, drain
Heat tortillas on flat grill and place 4 ounces (120 g) cooked corned beef
in each. Finish with 2 ounces (60 g) Gouda cheese and 2 tablespoons (30 ml)
of Sweet Onion Relish and 1 teaspoon (5 ml) of capers
Sweet Onion Relish
Ingredients:
5 tablespoons (75 ml) butter
3 cups (750 ml) finely chopped sweet onions
3/4 cup (175 ml) finely chopped leeks
3/4 cup (175 ml) finely chopped red pepper
2 tablespoons (30 ml) light brown sugar
2 teaspoons (10 ml) dry mustard
1/3 cup (75 ml) apple juice concentrate
1/2 cup (125 ml) finely chopped scallions
Preparation:
In a skillet, melt butter; add onions, leeks, peppers, dry mustard, sugar,
and apple juice concentrate. Cook for about a half hour until onions are fully
translucent and begin to brown. Add scallions after browning to retain some
color. Serve immediately or refrigerate before use.
